Slow Cooker Greek White Beans

Greek Beans 2-01


1 cup dried white beans
3 1/2 cups water
3 tablespoons olive oil
1 small white onion, chopped
2 large vine tomatoes, chopped and seeds removed
1 bay leaf
2 sprigs fresh thyme
3 cloves garlic, minced
1 tablespoon lemon juice
salt and pepper to taste

Rinse beans thoroughly.

Put beans in slow cooker and add water.  Cook on high until soft, 5-6 hours.

Once beans are soft, chop onion and tomatoes and prepare other ingredients.

Add one tablespoon of olive oil to a hot pan and cook onion until soft.

Add tomatoes, bay leaf, & thyme and cook until tomatoes are soft.  Remove from heat.

Drain cooked beans and add to pan.

Add lemon juice and remaining two tablespoons of olive oil.

Add minced garlic, mix well, and serve hot.  Add salt and pepper to taste.  The person that gets the bay leaf is lucky, but don’t eat it!
