Tofu cooked at a high temperature gets nice and crunchy and make a great substitution for meat in saucy dishes and stews!
Super firm tofu
Plenty of olive oil
Cut of tofu into cubes and toss with plenty of olive oil.
Preheat oven to 500F and spread out tofu on a thick cookie sheet.
Bake tofu for 30 minutes, or until nice and crunchy.
Add any sauce to your tofu that you like. My favorite at the moment is this fresh Thai seasoning paste that I picked up from the produce section of my local Safeway.
Be generous with your sauce. The tofu will remain nice and crunchy even if simmered for hours in a stew or other dish.
