Feta and Tomato Salad

Feta and Tomato Salad 2-04

This salad is a twist on the classic caprese salad with oregano instead of basil and feta instead of mozzarella.  I think it’s perfect with just balsamic vinegar, but you can drizzle with olive oil too if you want.

Ingredients:

Vine-ripened tomatoes
Salt
Feta cheese
Fresh oregano
Balsamic vinegar

Rinse tomatoes.

Thickly slice the tomatoes and discard tops and bottoms.

Spread slices out flat on a large plate.

Add salt to tomatoes and let sit for 30 minutes.  This really brings out the flavor and juiciness of the tomatoes.

Pick oregano.

Rinse and let dry while tomatoes are seasoning.

Look for a feta cheese that is low in sodium since you added salt to the tomatoes.  You can use crumbled if you want, but I prefer the block.

Cut up feta into tiny cubes.

Add cheese and oregano to tomatoes.

Drizzle with balsamic vinegar and enjoy!
