Easy Zucchini Soup

Zucchini soup-01

This simple soup is delicious and nutritious.  Top it with sea salt, cracked pepper, olive oil and Parmesan cheese, if desired, for a boost of flavor.

Ingredients:

1 tablespoon olive oil
1 white onion
2 cloves garlic
4 medium zucchini
32 oz good quality vegetable stock or broth
salt, pepper, olive oil, and Parmesan cheese to taste

Drizzle oil into large stock pot and warm pan.

Add chopped onion and garlic to pan, stir, and reduce heat to medium.

Cook until soft and golden brown.

Add chopped zucchini and vegetable stock.  Increase heat to high to bring to a boil.

The most important ingredient in this recipe is the vegetable stock.  I recommend using the best stuff you can find.  Bullion cubes are too salty and don’t taste fresh.  If you have some, use homemade stock.

Bring ingredients to a rolling boil.

Reduce to a simmer and cover with a lid.  Cook zucchini for 20 minutes until soft.

Remove from heat and let cool for about 10 minutes.

Carefully ladle into a blender.

Cover blender with towel to avoid spillage.

Blend ingredients on low.  Add salt, pepper, oil and cheese to taste.  Serve hot.

DIY Funny Bachelorette Party Hat

Penis Hat-01

This hat is funny and ridiculous!  It’s a plastic top hat attached to a black headband that’s decorated with blue feathers a glittery clay penis!

Materials:

Black headband
Plastic top hat
Black polymer clay
Old cookie sheet
Mod Podge
Plastic container
Paint brush
Glitter
Newspaper
Feathers
Hot glue/gun

Polymer clay is great!   It’s inexpensive and easy to harden in the oven.

Break off a piece of clay and warm in your hand.  Work it until it softens and shape into a penis.

Put the clay piece on an old cookie sheet and follow the baking directions on the package.

The clay loses its glossiness as it hardens.

Pour some Mod Podge into a plastic container.  I used an old sour cream container.

Add glitter to Mod Podge.

Mix well.

Put down a piece of newspaper.

Paint on an even layer of glitter mixture onto the top of the clay penis and let dry.

Flip over and do the same to the back.

Set out to dry completely.

Add your feather piece to the top of the hat using hot glue.

Add a huge dab of hot glue to the top of the hat and add feathers.  Be careful not to burn yourself.

Then glue the plastic top hat to the headband.

I glued my off center and checked it in the mirror before gluing.

Add a giant blob of hot glue to the top of the feather and add glittery clay penis.  Add more glue as needed until the penis is stable on the hat.

Give this to the bachelorette and get ready to laugh!

Honey Granola

I love this simple honey granola over plain greek yogurt and fresh fruit.  It has a nice, sweet crunch.  Delicious!  Be sure to used rolled oats and not instant oats.

Ingredients

3 cups rolled oats
3 tablespoons packed brown sugar
1/2 teaspoon ground cinnamon
1/3 cup honey
1/4 cup canola oil
1 teaspoon vanilla extract

Preheat the oven to 300°F and arrange a rack in the middle of the oven.  Place oats, brown sugar, and cinnamon in a large bowl.

Mix with a wooden spoon.

Place the honey, oil, and vanilla in a small bowl and mix.

Pour over the oat mixture.

Mix together until the oats are thoroughly coated.

Spread oat mixture on a rimmed baking sheet.

Bake for 15 minutes.

Stir oats and place back in oven.

Continue baking until the granola is very light golden brown, about 15 minutes more.  Remove from oven and lightly stir to avoid sticking to pan.  Granola will harden as it cools.

Ermahgerd Bachelorette Party Sash

My good friend is getting married very soon and we recently celebrated her bachelorette party.  She is a super cool person and has a great sense of humor.  She dressed up as the Ermahgerd girl for Halloween a few years ago.  Check photo below if you have not yet come across this internet phenomenon.

The maid of honor suggested we make an Ermahgerd bachelorette party sash for her to wear during the party.  We used the online ERMAHGERD translator to get the spelling just right.

We surprised her with the sash at the beginning of her bachelorette party.

I cut out the glitter letters on my Cricut machine and carefully glued them on with a hot glue gun.

Easy Basil Pistou

Pistou is a delicious sauce that’s similar to pesto but lacks pine nuts.  It can be used on warm pasta, spread on bread, or drizzled over vegetable soup.

Ingredients

1 1/2 garlic cloves
1 1/2 cups fresh basil leaves
1/4 teaspoon salt
3 tablespoons good olive oil
1/3 cup shredded Parmesan cheese

Finely chop garlic in a food processor.

Add basil and salt.

Process until basil is finely chopped, scraping down sides of bowl.

Add the oil and blend.

Add cheese.

Season with pepper, transfer to bowl, and use immediately.

5 Minute Craft–Personalized Wedding Shower Napkins

This month’s 5 minute craft is adorable wedding shower napkins!  Feel free to play around with colors!  White and black are perfect go to colors, but metallic silver ink might work well on a darker color napkin.  🙂

Materials

Small alphabet stamps ($1.50 at Michaels)
White party napkins
Black stamp pad
Rubber band

It’s best to start with the bottom of the napkin to make sure the lettering is spaced out evenly.  Select the letters of the bride’s new last name and secure together using a hair tie or rubber band.

Lightly press the letters stamps on your stamp pad and test out on an extra napkin.

Set out your napkins and stamp working upwards on the napkin.  Start with the last name, then “Mrs.”, then “future”, and end with “The”.

This bread is great for beginners because it requires no kneading at all.  It’s a nice and crunchy bread that makes a great side.  It’s especially good when it’s warm out of the oven.  This loaf won’t last long!

Ingredients

3 cups all-purpose flour
1/4 tsp quick rise yeast
1 1/4 tsp salt
1 1/2 cups filtered water

In a large bowl, mix together the dry ingredients.

Add water and stir.

Cover with plastic wrap and leave for 18 hours.

Flour your work surface and put the dough on it.  Dough will be very sticky.

Fold the dough over on itself and cover with more flour. Let dough rest for 15 minutes.

Coat a cotton kitchen towel with a thick layer of flour.

Put the dough on the floured towel.

Cover with another floured towel and let it rise for about 2 hours.

30 minutes before the dough is ready, preheat the oven to 400F and put cast iron skillet in the oven to heat.

When the dough’s ready, carefully remove your skillet from the oven and add the dough.  The edges of the dough that hit the hot skillet will cook and it will smell amazing!

Cover the skillet with a lid or cookie sheet and bake 30 minutes.

Remove the lid and bake until the loaf is golden brown, another 15 to 30 minutes. Enjoy this bread warm!
