Pistou is a delicious sauce that’s similar to pesto but lacks pine nuts. It can be used on warm pasta, spread on bread, or drizzled over vegetable soup.
1 1/2 garlic cloves
1 1/2 cups fresh basil leaves
1/4 teaspoon salt
3 tablespoons good olive oil
1/3 cup shredded Parmesan cheese
Finely chop garlic in a food processor.
Add basil and salt.
Process until basil is finely chopped, scraping down sides of bowl.
Add the oil and blend.
Season with pepper, transfer to bowl, and use immediately.
