Honey Granola

I love this simple honey granola over plain greek yogurt and fresh fruit.  It has a nice, sweet crunch.  Delicious!  Be sure to used rolled oats and not instant oats.

Ingredients

3 cups rolled oats
3 tablespoons packed brown sugar
1/2 teaspoon ground cinnamon
1/3 cup honey
1/4 cup canola oil
1 teaspoon vanilla extract

Preheat the oven to 300°F and arrange a rack in the middle of the oven.  Place oats, brown sugar, and cinnamon in a large bowl.

Mix with a wooden spoon.

Place the honey, oil, and vanilla in a small bowl and mix.

Pour over the oat mixture.

Mix together until the oats are thoroughly coated.

Spread oat mixture on a rimmed baking sheet.

Bake for 15 minutes.

Stir oats and place back in oven.

Continue baking until the granola is very light golden brown, about 15 minutes more.  Remove from oven and lightly stir to avoid sticking to pan.  Granola will harden as it cools.
